Weekend Recap

Happy Monday everyone! Hope you all had a good weekend. My weekend was a good mix of relaxation and fun!
On Friday, Blake and I had a date night. First, we ate dinner at NY Pie. The owner moved to Nashville from New York and the pizza is amazing!! After dinner we went bowling, which was fun even though we both weren't very good {actually I was awful.} We started off only wanting to play one game and ended up playing four. It made me really want to put together a group bowling trip sometime soon!
Saturday, we woke up and headed to Noshville for breakfast. I got two LARGE pancakes and enjoyed every minute of it. After breakfast we ran some errands and went to the mall. Later that day we took our dog Penny to a place called Wags and Whiskers in East Nashville to give her a bath. This store has the big tubs that you can wash your dog in. They had tons of different shampoo and conditioners. She left smelling and look great!




Saturday night we went to a new sports bar called Jed's to watch the Vanderbilt/Tennessee game. Although I was not pleased with the results of the game, it was still a great night and a very close game!
Sunday we celebrated Thanksgiving with some friends. Everyone brought different dishes and it was such a yummy meal! I made a Sweet Potato Casserole. The recipe is listed below.

Ingredients

  • 5 sweet potatoes, sliced
  • 1/4 cup reduced fat margarine
  • 1/2 cup packed brown sugar
  • 3 tablespoons orange juice
  • 1 pinch ground cinnamon
  • 1 (10.5 ounce) package miniature marshmallows

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil, and cook until tender, about 15 minutes. Remove from heat, drain, and mash.
  3. Place mashed sweet potatoes in large bowl, and use an electric mixer to blend with the margarine, brown sugar, orange juice, and cinnamon. Spread evenly into a 9x13 inch baking dish. Top with miniature marshmallows.
  4. Bake for 25 to 30 minutes in the preheated oven, or until heated through, and marshmallows are puffed and golden brown.
